Blueberry French Toast Strata
This is another tempting recipe that we will likely be serving up to our guest at Carr Manor next week.
You will enjoy the fresh blueberry syrup as much as the French toast.
1 lb. loaf of French bread (I used sweet potato rolls)
1 8oz. cream cheese (cut into small cubes while cold)
2 cups frozen blueberries
2 1/2 cups half/half
6 TBLS butter, melted
1/4 cup maple syrup
Cut bread into cubes (approx. 12 cups). Spray 9X13 inch pan with cooking spray. Put half of the bread cubes into the pan.
Egg Puff Recipe
3/4 cup all-purpose flour
3 TBLS. melted butter
12 oz. cottage cheese
3 cups shredded cheddar cheese (or other cheese selection of choice)
3/4 teas. non-aluminum baking powder
3/4 cup of your favorite additional ingredient *
Spray 6 small ramekins, or small serving bowls with cooking spray.
Combine eggs, flour, baking powder in mixing bowl. Add in cooled melted butter and stir in both cottage cheese and shredded cheese of choice. Then, mix in your favorite additional ingredient *.
Before we head off for our assignment next month with Carr Manor in Cripple Creek Colorado we decided to try out a few of their tempting recipes. This morning we enjoyed a scrumptious serving of this delicious egg puff. You can add a variety of veggies or meat selections. We choose minced green onions and baby Bella mushrooms and it was yummy!
