Egg Puff Recipe
3/4 cup all-purpose flour
3 TBLS. melted butter
12 oz. cottage cheese
3 cups shredded cheddar cheese (or other cheese selection of choice)
3/4 teas. non-aluminum baking powder
3/4 cup of your favorite additional ingredient *
Spray 6 small ramekins, or small serving bowls with cooking spray.
Combine eggs, flour, baking powder in mixing bowl. Add in cooled melted butter and stir in both cottage cheese and shredded cheese of choice. Then, mix in your favorite additional ingredient *.
Mix all well and divide egg mixture into even amounts in each of the ramekins.
Bake 350 degrees for 25-30 minutes. Avoid overcooking. Cook until lightly browned or until toothpick test is clean.
* Favorite additions can include: Minced ham, mushrooms/green onions, shredded crab, steamed broccoli or 4 oz. can of chopped green chilies.
