Egg Puff Recipe
8 Eggs
3/4 cup all-purpose flour
3 TBLS. melted butter
12 oz. cottage cheese
3 cups shredded cheddar cheese (or other cheese selection of choice)
3/4 teas. non-aluminum baking powder
3/4 cup of your favorite additional ingredient *
Spray 6 small ramekins, or small serving bowls with cooking spray.
Combine eggs, flour, baking powder in mixing bowl. Add in cooled melted butter and stir in both cottage cheese and shredded cheese of choice. Then, mix in your favorite additional ingredient *.
Mix all well and divide egg mixture into even amounts in each of the ramekins.
Bake 350 degrees for 25-30 minutes. Avoid overcooking. Cook until lightly browned or until toothpick test is clean.
* Favorite additions can include: Minced ham, mushrooms/green onions, shredded crab, steamed broccoli or 4 oz. can of chopped green chilies.

I was excited to come across your recipe because I like eggs. But then the recipe calls for the use of all purpose flour. Is there an alternative to this, like almond flour? I am trying to eat healthy this year by cutting down on grains, breads, pastas, etc. Egg is good as it is a major source of protein. It is so versatile because there are so many dishes that you can do with eggs. It is perfectly fine to eat eggs everyday, just make sure it is free range or organic.

This is more of a question than a comment..I was recently at a wedding..the day after Christmas as a matter of fact..there was a kale salad made by the bride's sister..I would love to have that recipe..thanks :)Teri maid of honor

Teri, We love to call that particular salad "Kale!" Caesar...get it? Simply rinse your greens well and remove thick stems. Cut trimmed leaves into chiffonade (small thin shredds). Place in a bowl and add freshly grated parmesean cheese, dried craisins, toasted almonds, 1-2 chopped green onions. Toss with your favorite caesar dressing and serve. This is also good when you add a little chopped bacon. But, what dish isn't better when you add bacon?
